Black Bean Tacos Recipe

Ingredients:

  • 1 tablespoon vegetable oil
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • Salt and pepper, to taste
  • 1 (15 oz) can black beans, drained and rinsed
  • 1/4 cup vegetable broth
  • 8-10 corn tortillas
  • Toppings of your choice (such as shredded lettuce, diced tomatoes, shredded cheese, sour cream, cilantro, etc.)

Instructions:

  1. Heat the oil in a large skillet over medium heat. Add the onion and sauté until softened, about 3-5 minutes.
  2. Add the garlic, cumin, chili powder, salt, and pepper. Cook for an additional 1-2 minutes, or until fragrant.
  3. Stir in the black beans and vegetable broth. Bring to a simmer and let cook for 5-7 minutes, or until the mixture thickens.
  4. Heat the tortillas according to package instructions.
  5. To assemble the tacos, spoon some of the black bean mixture onto each tortilla.
  6. Top with your desired toppings, such as shredded lettuce, diced tomatoes, shredded cheese, sour cream, and cilantro.
  7. Serve and enjoy your delicious Black Bean Tacos.
