Black Bean Tacos Recipe
Ingredients:
- 1 tablespoon vegetable oil
- 1 onion, diced
- 2 cloves of garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- Salt and pepper, to taste
- 1 (15 oz) can black beans, drained and rinsed
- 1/4 cup vegetable broth
- 8-10 corn tortillas
- Toppings of your choice (such as shredded lettuce, diced tomatoes, shredded cheese, sour cream, cilantro, etc.)
Instructions:
- Heat the oil in a large skillet over medium heat. Add the onion and sauté until softened, about 3-5 minutes.
- Add the garlic, cumin, chili powder, salt, and pepper. Cook for an additional 1-2 minutes, or until fragrant.
- Stir in the black beans and vegetable broth. Bring to a simmer and let cook for 5-7 minutes, or until the mixture thickens.
- Heat the tortillas according to package instructions.
- To assemble the tacos, spoon some of the black bean mixture onto each tortilla.
- Top with your desired toppings, such as shredded lettuce, diced tomatoes, shredded cheese, sour cream, and cilantro.
