Here's a recipe for Classic Beef Stew:
Ingredients:
- 2 lbs beef chuck roast, cut into 1-inch cubes
- Salt and pepper, to taste
- 2 tablespoons flour
- 2 tablespoons olive oil
- 1 onion, diced
- 2 cloves of garlic, minced
- 2 cups beef broth
- 1 cup red wine
- 2 tablespoons tomato paste
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 2 bay leaves
- 2 cups diced potatoes
- 2 cups diced carrots
- 1 cup frozen peas (optional)
Instructions:
- Season the beef cubes with salt and pepper, and toss with flour.
- Heat the olive oil in a large pot or Dutch oven over medium-high heat. Add the beef and brown on all sides, about 5-7 minutes. Remove the beef from the pot and set aside.
- Add the onion and garlic to the pot, and sauté until softened, about 3-5 minutes.
- Return the beef to the pot and stir in the beef broth, red wine, tomato paste, thyme, rosemary, and bay leaves. Bring the mixture to a boil, then reduce heat to low and simmer for 1 hour.
- Add the potatoes and carrots, and continue to simmer for an additional 30 minutes or until the vegetables are tender.
- If using, stir in the frozen peas during the last 5 minutes of cooking.
- Remove the bay leaves before serving and enjoy your delicious Classic Beef Stew.
