Here's a recipe for Classic Beef Stew:

Ingredients:

  • 2 lbs beef chuck roast, cut into 1-inch cubes
  • Salt and pepper, to taste
  • 2 tablespoons flour
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 2 cups beef broth
  • 1 cup red wine
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 2 bay leaves
  • 2 cups diced potatoes
  • 2 cups diced carrots
  • 1 cup frozen peas (optional)

Instructions:

  1. Season the beef cubes with salt and pepper, and toss with flour.
  2. Heat the olive oil in a large pot or Dutch oven over medium-high heat. Add the beef and brown on all sides, about 5-7 minutes. Remove the beef from the pot and set aside.
  3. Add the onion and garlic to the pot, and sauté until softened, about 3-5 minutes.
  4. Return the beef to the pot and stir in the beef broth, red wine, tomato paste, thyme, rosemary, and bay leaves. Bring the mixture to a boil, then reduce heat to low and simmer for 1 hour.
  5. Add the potatoes and carrots, and continue to simmer for an additional 30 minutes or until the vegetables are tender.
  6. If using, stir in the frozen peas during the last 5 minutes of cooking.
  7. Remove the bay leaves before serving and enjoy your delicious Classic Beef Stew.
