Ingredients:
- 4 boneless, skinless chicken breasts
- Salt and pepper, to taste
- 1 head of romaine lettuce, washed and chopped
- 1 cup croutons
- 1/2 cup grated Parmesan cheese
- For the Caesar dressing:
- 1/2 cup mayonnaise
- 1/4 cup grated Parmesan cheese
- 2 cloves of garlic, minced
- 2 tablespoons freshly squeezed lemon juice
- 2 anchovy fillets, minced (optional)
- 1 teaspoon Dijon mustard
- 1/2 teaspoon Worcestershire sauce
- 1/4 cup olive oil
- Salt and pepper, to taste
Instructions:
- Season the chicken with salt and pepper. Grill the chicken over medium-high heat for 6-8 minutes per side, or until cooked through. Let the chicken cool, then slice it into bite-sized pieces.
- In a large bowl, mix together the mayonnaise, Parmesan cheese, garlic, lemon juice, anchovy fillets (if using), Dijon mustard, Worcestershire sauce, olive oil, salt, and pepper. Whisk well to combine.
- In a large salad bowl, toss the romaine lettuce, croutons, and Parmesan cheese. Add the chicken and dressing, and toss to coat.
