      Here's a recipe for Grilled Chicken Caesar Salad:

Ingredients:

  • 4 boneless, skinless chicken breasts
  • Salt and pepper, to taste
  • 1 head of romaine lettuce, washed and chopped
  • 1 cup croutons
  • 1/2 cup grated Parmesan cheese
  • For the Caesar dressing:
  • 1/2 cup mayonnaise
  • 1/4 cup grated Parmesan cheese
  • 2 cloves of garlic, minced
  • 2 tablespoons freshly squeezed lemon juice
  • 2 anchovy fillets, minced (optional)
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon Worcestershire sauce
  • 1/4 cup olive oil
  • Salt and pepper, to taste

Instructions:

  1. Season the chicken with salt and pepper. Grill the chicken over medium-high heat for 6-8 minutes per side, or until cooked through. Let the chicken cool, then slice it into bite-sized pieces.
  2. In a large bowl, mix together the mayonnaise, Parmesan cheese, garlic, lemon juice, anchovy fillets (if using), Dijon mustard, Worcestershire sauce, olive oil, salt, and pepper. Whisk well to combine.
  3. In a large salad bowl, toss the romaine lettuce, croutons, and Parmesan cheese. Add the chicken and dressing, and toss to coat.
